                     Fritzie's Secret Ingredient Roast

2 1/2 to 3 pound chuck roast
1 individual package dry onion soup
1 cup leftover brewed coffee
Place all ingredients in crock potand cook on low
for 10 to 12 hours!
You may thicken the juice to make the most delicious,
rich gravy ever!

Aunt Mary was my father's sister.  She lived on a farm in Illinois all her life and she was a marvelous cook.  She had fresh eggs and fresh cream, and butter made from the cream.  There wasn't anything phony in Aunt Mary's cooking.

This recipe was a family favorite from the time I was a little girl.  I remember typing it for my mother when I was in high school because her recipe card was old and the writing was faint.  Fritzie made these caramels and won the grand champion prize at the Heart of Illinois Fair when she was in high school.  

I've shared it in the Sprakers Reformed Church Ladies Aid and Missionary Society cookbook of Favorite Country Recipes and now I share it with you.  I hope you like them.  JJ

 AUNT MARY’S CARAMELS

Stir together:
1 cup brown sugar
1 cup sugar
1 cup real cream
1 cup real butter
1 cup white Karo

Cook until a little drizzle on a spool into cold water forms a soft ball.  It does not get hard enough to crack on a dish.  Add vanilla, pinch of salt and chopped nuts (if desired). Do not need to beat.  Pour onto a greased rimmed cookie sheet.  When cool, cut into bite sized pieces and wrap in waxed paper. Yummmmm!

               Nanna’s  Billy Goat Cookies

1 cup shortening                       2½ cups flour
1½   cups brown sugar             1 teas. cinnamon
3 eggs beaten                           1 cup chopped dates
¼ cup warm water                    1 cup raisins    
1¼ teas. baking soda                1 cup chopped nuts

Blend shortening and sugar until creamy.  Beat in eggs.  Mix soda and water, then stir into creamed mixture.  Add flour and cinnamon which have been sifted together.  Add dates, raisins and nuts, mixing well.

Drop on greased cookie sheet. Bake in hot oven (400) for 10 minutes.

If desired, dough can be kept in refrigerator and baked as wanted.

                     Quick As A Wink Cookies

I wish I knew who created these cookies so I could give them credit for a great recipe idea.  However, what I am sharing here are my variations for making many kinds of cookies from this basic recipe.  Have fun and create your own!  JJ
Preheat oven to 350°

1  cake mix
2  eggs
½ cup salad oil

Stir to mix.  Add whatever you like to make the cookies yours.
Drop by rounded teaspoon on ungreased cookie sheet.  
Bake for 8 to 10 minutes.  Cookies should be soft and not brown.
Let cookies rest for a minute before removing them to a rack to cool.

Variations:
My Favorite Cookies
Betty Crocker Butter Pecan Cake Mix mixed with 2 eggs and ½ cup salad oil
½ cup chocolate chips
½ cup butterscotch chips
½ cup chopped pecans

 Spice Cookies
Spice Cake Mix mixed with 2 eggs and ½ cup salad oil
½ cup cinnamon chips
½ cup chopped walnuts
½ cup butterscotch chips  

Yellow Cake Mix Cookies
Yellow Cake Mix mixed with 2 eggs and ½ cup salad oil
½ cup chocolate chips
½ cup coconut
½ cup chopped pecans

White Cake Mix Cookies
White Cake Mix mixed with 2 eggs and ½ cup salad oil
½ cup butterscotch chips
½ cup Reese’s chips
½ cup chopped walnuts

Spice Cookies with Raisins and Dates
Spice Cake Mix mixed with 2 eggs and ½ cup salad oil
½ cup chopped dates
½ cup chopped raisins
½ cup chopped walnuts
½ cup cinnamon chips

 Kids Cookies
White Cake Mix prepared with ½ cup colored sprinkles, 2 eggs and ½ cup salad oil
¾ cup mini M&Ms
¾ cup Reese’s chips  

Christmas Cookies
Chocolate Cake Mix prepared with 1/2 cup chopped peppermint sticks,
2 eggs and ½ cup salad oil
½ cup white chocolate chips
½ cup mini chocolate chips

CHEDDAR PUFFS APPETIZER

1/2 cup (1 stick butter)
1 cup grated sharp Cheddar cheese (4 oz.)
1 1/4 cup sifted flour
1 tsp. salt

Cream butter with cheese until smooth in medium-sized bowl.  Blend in flour and salt, then knead lightly with hands to form a soft dough.  Roll, a teaspoonful at a time, into balls; place on greased cookie sheets.  Bake in hot oven (400 degrees) for 12 minutes, or until golden.  Serve hot.
